To gain acceptance with chefs, growers find that superior tasting, exotic varieties are a real draw.  Independent restaurants are able to distinguish themselves from chains by offering these kinds of specialty vegetables on their menus.  The delicacy and shorter shelf life of produce like heirloom tomatoes often makes them less attractive to supermarket chains and produce distributors.  These characteristics, however, open up a niche for SHARE-d farms to direct market to restaurants.
